garden burrito

Ingredients:

-2 collard greens (used as the wrap)

-1 red onion

-1 avocado

-1 bell pepper

-1 sweet pepper

-1 mango

-½ lime

-1 tbps. coconut aminos

-1 cup walnuts

-salt, smoked paprika, garlic, cayenne pepper

-salsa (optional)

 

 

Directions:

-in a food processor or blender, pulse walnuts with coconut aminos & spices (be careful not to pulse too fine.  It should have a crumbly meat-like texture)

 

-mash the avocado and spread it evenly onto each collard green. This will help all other ingredients stick to the collard wrap!

-chop the peppers, onions, & mango into small pieces

-add the walnut meat as well as the chopped fruits & veggies onto the wrap

 

-squeeze the lime on top 

 

-roll it up and enjoy

banana ice cream

Ingredients:

-3 ½  bananas

-3 strawberries (optional)

-¼ cup plant milk

-2 tbsp. cacao powder

-1 tbsp. maple syrup

-2 tbsp. all natural peanut butter

-2 tbsp. chia seeds

-1 tbsp. cacao nibs

 

 

Directions:

-wait until bananas are ripe & spotty, then freeze them overnight

-take out frozen bananas to thaw for at least 5 minutes

-blend 3 bananas in a high speed blender with plant milk, cacao powder, & maple syrup

-pour blender contents into a bowl

-slice ½ a banana & place on top

-drizzle with peanut butter

 

-sprinkle on the cacao nibs & chia seeds 

-add strawberry slices if desired!

 butternut soup

Ingredients:

-1 butternut squash

-2 sweet potatoes

-3 whole carrots

-3 garlic cloves

-1 can coconut milk

-1 cup vegetable broth

-2 tbsp maple syrup

-½ lemon

-¼ cup hemp seeds

-1 tbsp pumpkin  seeds

-¼ cup nutritional yeast 

-spices to taste: sea salt, black pepper, turmeric, 

cayenne pepper, & smoked paprika

 

Directions:

-steam the butternut squash, sweet potatoes, & carrots until soft

-blend all of the steamed vegetables along with the garlic cloves,  can of coconut milk, & hemp seeds

-pour the blender contents into a large pot on the stove & turn on medium heat

-add the vegetable broth, maple syrup & juice from half a lemon, then stir

-add spices & nutritional yeast to your preferences

-top it with pumpkin seeds & serve
